It is amazingly easy--literally, one tbsp olive oil, one tbsp dijon mustard and the juice of one lemon--mix together. That's enough for one large salmon steak, if you have two, increase accordingly. Add in salt and pepper to taste, possibly a bit of white wine, if you like, and bake for 25 minutes at 350 degrees F. I frequently cut up carrots or mushrooms and throw them into the dijon sauce. Usually serve with couscous.
